Spanish Omelette With Serrano Ham And Broccoli (GF)


This spanish omelette is so quick and easy to make.

A delicious meal in 15 minutes that is so filling and can be doubled up to share 🙂

Calories 522, Protein 36g, Carbs 24g, Fiber 5g and Fat 30g


  • 100g White Potato
  • 50g Red Onion
  • 1/2 Tsp Coconut Oil
  • 2 Large Eggs
  • 50g Tenderstem Broccoli
  • 30g Manchego Cheese Grated
  • 2 Slices Serrano Ham

You will need:

  • Vegetable Chopping Board
  • Sharp Knife
  • Grater
  • Scales
  • Medium Non Stick Frying Pan
  • Spatula
  • Large Bowl
  • Whisk
  • Peel and grate your potato and onion

  • Heat your coconut oil in your frying pan over a medium heat

  • Add your potato and onion and cook gently for 5 minutes stirring occasionally

  • Add your broccoli

  • Whisk you eggs in a bowl until combined

  • Pour over your potato, onion and broccoli.

    Swivel the pan about to ensure an even coating of base

  • Sprinkle over the manchego cheese

    Tear up your serrano ham and put on top of the omelette

    Cook until base is cooked and solid so that you an turn it over

    Cook over heat for 2 minutes, then remove from heat and leave in pan for a minute.

  • Serve and enjoy
