Coddled Egg (GF DF)


These coddled eggs are with sweet potato, wilted spinach, pancetta and egg.

So easy, simple and delicious.

I serve this with raw broccoli soldiers but you can add soldiers that you love.

Calories 284, Protein 15g, Carbs 12g, Fiber 3g and Fat 13g


  • 100g Sweet Potato Mash
  • 25g Pan Fried Pancetta
  • Handful Of Spinach
  • Large Egg
  • Sea Salt
  • Pepper

You will need:

  • Pre Heated Oven 180C Conventional 160C Fan
  • Small Saucepan
  • Masher
  • Small Frying Pan
  • Spatula
  • Jar / Ramekin
  • Roasting Pan
  • Mash your sweet potato

  • Wilt your spinach over a medium heat in the fat from pancetta

  • Pop the sweet potato mash into bottom or jar or ramekin

  • Add your wilted spinach and scatter half your pancetta over the top

  • Crack egg on top. ¬†Add pancetta and season

  • Seal if in jar and add to tin

    Add warm water to pan and place in oven

    Bake for 15-17 minutes

  • Serve hot with soldiers of your choice.
