Dundee Cake (with guide to be GF and or DF)


This cake is perfect for the christmas period. ┬áBake it for yourself or bake it as a gift. It is perfect served on it’s own or with a cheeseboard.

Dundee cake is lighter than most fruit cake to eat yet absolutely packed with fruit and almonds.

This is a big cake that gives 16 slices

Calories 341.25, Protein 5.32g, Carbs 49.19g, Fiber 2.75g and Fat 18.08g


  • 175g Stork or 175g Vitalite Dairy Free
  • 175g Light Muscovado Sugar
  • 3 Large Eggs
  • 225g Sultanas
  • 200g Glace Cherries
  • 125g Candied Mixed Peel
  • 225g Plain Flour or 200g Rice Flour
  • 2 Tbsp Baking Powder (you can get gluten free)
  • 1 Tsp Cinnamon
  • 1/2 Tsp Nutmeg
  • 1/2 Tsp Mixed Spice
  • Zest of a Lemon
  • 50g Chopped Almonds
  • 75g Whole Blanched Almonds

You will need:

  • Preheated Oven 160C Conventional 140C Fan
  • Large Greased and Lined Cake Tin
  • Scales / Measuring Spoons
  • Large Mixing Bowl
  • Spatula


  • Cream your butter and sugar together

  • Mix in your eggs

  • Sift in your flour, spices and baking powder

    Mix in well

  • Add your sultanas and mix in

  • Add your chopped almonds and mix in well

  • Add your glace cherry halves and mix in well

  • Add your candied peel and lemon zest, mix in well

  • Makes sure your tin has greased sides and line base

  • Add your cake mix and then decorate with your blanched almonds

    Bake in the middle of the oven for 2 hours to 2 hours 15 minutes

  • When baked allow to cool completely

    If you wish pop a couple of Tbsp of Brandy over the cake

    If wrapped in greaseproof paper and a double layer of foil in an airtight tin, this will keep for 3 minutes

    It also freezes really well.
